I'm sharing two of my family's favorite low-fat dinners. I love these recipes in particular because my kids also like them. For me, it is often difficult to find foods that are diet-friendly as well as kid-friendly.



Grilled Orange Chicken Strips

SERVINGS: 4

CATEGORY: Lower Fat

METHOD: Grill (gas or charcoal)

TIME: Prep: 15 min. + marinating Grill: 10 min.
Ingredients:

* 2 tablespoons chopped fresh orange segments
* 1/4 cup orange juice
* 1/4 cup olive oil
* 2 teaspoons lime juice
* 3 garlic cloves, minced
* 1 teaspoon dried thyme
* 1 teaspoon dried oregano
* 1 teaspoon ground cumin
* 1/2 teaspoon salt, optional
* 1 pound boneless skinless chicken breasts, cut into 1/4-inch strips

Directions:
Combine the first nine ingredients in a resealable plastic bag or shallow glass container; add chicken and turn to coat. Seal or cover and refrigerate for 1 hour.
Drain and discard marinade. Thread meat on metal or soaked wood skewers. Grill, uncovered, over medium-hot heat for 6-8 minutes or until juices run clear, turning often. Yield: 4 servings.






Little Meatloaf
SERVINGS: 8



TIME: Prep: 15 min. Bake: 45 min.
Ingredients:

* 3 egg whites
* 1/2 cup fat-free plain yogurt
* 1 can (6 ounces) tomato paste
* 1 tablespoon Worcestershire sauce
* 1/2 cup quick-cooking oats
* 1 small onion, chopped
* 2 tablespoons dried parsley flakes
* 1 teaspoon salt
* 1 teaspoon poultry seasoning
* 1/2 teaspoon garlic powder
* 1/2 teaspoon pepper
* 1 pound lean ground beef
* 1 pound ground turkey
* 1/2 cup ketchup

Directions:
In a large bowl, combine the first 11 ingredients. Crumble beef over mixture and mix well. Shape into eight loaves.
Place on a rack coated with cooking spray in a shallow baking pan. Bake, uncovered, at 350° for 30 minutes. Spoon ketchup over the loaves. Bake 15 minutes longer or until a meat thermometer reads 160° and meat is no longer pink. Yield: 8 servings.

It is...thyme, olive oil, garlic and orange juice...so, so yummy!
