(no subject)

I have two huge bags of potatoes. Any suggestions for using them up? What is your favorite potato recipe? We're talking about Idaho spuds here, not red or yellow.

about 5 potatoes
1 package of smoked saugage, cut into small pieces (i cut them like thick pepperoni and then cut them in half)
can of sauerkraut, drained
onion, sliced



cut the potatoes up into bite size pieces, fry them in some canola oil (that's what i use) or veggie oil over about med-hi heat til golden and slightly crispy. add in the sliced onion, cook til onion is tender.
add the sauerkraut & sausage, reduce heat to about low, stir, cover and let cook for a few minutes.

Mashed potatoes are my favorite! And you could make sausage gravy to put on them. That was always my favorite when I was little.
Potato soup
You could chop them up and put them in eggs, maybe.
Hashbrowns (shredded up style)
French fries
Ok, I just started spouting out potato ideas. I don't know how to make most of these. But maybe you do :)

5 lbs russet potatoes ( 99% of russet potatoes are Idaho potatoes) 3/4 cup of heavy cream (use milk if diet conscious) , 1 stick of butter or margarine, 1 cup of sour creme, salt and a little ground black pepper, 1 cup of shredded Cheddar cheese, 3 slices of cooked bacon or just get some real bacon bits in the salad section at WalMart. 2 tablespoons of chopped chives: boil potatoes until they are tender, warm cream and butter until hot ( don't boil) , fold in Cheddar cheese, bacon and chives and add more cream or milk if too thick. A mixer is not recommended as it is said to make the mashed potatoes gummy! Use a ricer to get rid of lumps if you don't like lumps! Reheat in microwave or on low on stove before serving. Bill

Believe it or not, I am not much of a potato person. I hate them mashed or baked. However, my great-aunt has an interesting Greek potato recipe where they are sliced and cooked in olive oil with either oregano or rosemary as a spice. They are actually quite good, which says a lot considering my general potato tastes.

Yikes...Idaho's you write?? Maine potatoes are best. But, you can make a spaghetti sauce and put quartered potatoes in the sauce. You might just like the taste. A little Italian with your potatoes.

Potato salad is good ~ especially with boiled shrimp added to it.

I like stuffed baked potatoes. I don't whip or cream the potatoes when I make them; I like to leave it kind of chunky. I use sauteed onions and mushrooms, along with butter, sour cream, bacon bits and cheddar. It's a main dish.

I like to just boil potatoes 'til tender, drain them, then add butter and chives. They smoosh up just a little when you stir them up.

You could Google a recipe for potato bread because it is fantastic.
